**Ingredients (for 4 cakes):**
• 150 g 70% dark chocolate
• 100 g butter
• 3 eggs + 2 yolks
• 80 g sugar
• 40 g plain flour
• 4 teaspoons Mouccarella (for the centre)
• Vanilla ice cream, to serve
**Preparation:**
1. Melt the chocolate with the butter in a bain-marie. Leave to cool slightly.
2. Whip the eggs, yolks and sugar. Fold in the melted chocolate and sifted flour.
3. Butter and flour 4 individual ramekins. Pour half the mixture into each.
4. Add 1 teaspoon of Mouccarella in the centre, cover with the remaining mixture.
5. Bake at 200°C for 10–12 minutes. The centre should remain soft. Serve immediately with ice cream.
